  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces white chocolate, melted
  • 1 cup cranberry sauce

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Pour the cream cheese mixture over the crust and bake for 50-60 minutes.
  6. Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
  7. Whip the heavy cream and fold in the melted white chocolate until combined.
  8. Spread the white chocolate mousse over the chilled cheesecake.
  9. Top with cranberry sauce before serving.
