A delicious and easy-to-make casserole that combines the flavors of traditional Chile Rellenos in a convenient bake.

  • 4 large poblano peppers
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup cooked ground beef or turkey
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup diced tomatoes (canned or fresh)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roast the poblano peppers until the skin is charred, then peel and chop them.
  3. In a large bowl, mix the chopped peppers, cooked meat, and half of the cheese.
  4. In another bowl, whisk together the eggs, milk, garlic powder, onion powder, cumin, salt, and pepper.
  5. Layer the pepper mixture in a greased baking dish, then pour the egg mixture over it.
  6. Top with the remaining cheese and diced tomatoes.
  7. Bake for 30-35 minutes or until the casserole is set and the cheese is bubbly.
  8. Let it cool for a few minutes before serving.

  • For a vegetarian option, omit the meat and add more vegetables.
