A simple and delicious Chicken Tortilla Soup recipe that is perfect for any occasion.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup tortilla chips, crushed
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chicken broth, black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  4. Stir in the shredded chicken and lime juice, and cook for an additional 5 minutes.
  5. Serve hot, topped with crushed tortilla chips, diced avocado, and cilantro.

Notes

  • For a spicier soup, add jalapeños or hot sauce.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
