- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes
- 1 cup corn, frozen or canned
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup tortilla chips, crushed
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- 1 lime, juiced
- In a large pot, sauté the onion and garlic until translucent.
- Add the chicken broth, black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
- Stir in the shredded chicken and lime juice, and cook for an additional 5 minutes.
