A quick and easy cheesy keto dish made in a crockpot with chicken and broccoli.

Ingredients

  • 2 lbs chicken breasts
  • 4 cups broccoli florets
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the broccoli florets on top of the chicken.
  3. In a bowl, mix the cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the cheese mixture over the chicken and broccoli in the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and mix everything together before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute chicken breasts with thighs for more flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days.
