A creamy and delicious butternut squash soup that is perfect for a cozy meal.

Ingredients

  • 2 medium butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add cubed butternut squash and ground ginger, stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer until squash is tender, about 20 minutes.
  6. Blend the soup until smooth using an immersion blender or in batches in a regular blender.
  7. Stir in coconut milk and season with salt and pepper.
  8. Serve hot, garnished with a drizzle of coconut milk if desired.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • This soup can be stored in the refrigerator for up to 5 days.
  • Freezes well for up to 3 months.
