  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add melted coconut oil, brown sugar, almond milk, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine baking soda, salt, ground cinnamon, and flour.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
