  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion, carrots, and celery, and sauté until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the white beans, vegetable broth, diced tomatoes, thyme, rosemary, salt, and pepper.
