  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1/4 cup butter, melted

Instructions

  1. In a large pot, brown the beef over medium heat until browned on all sides.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the tomato paste, thyme, rosemary, salt, and pepper.
  4. Add the beef broth, carrots, and potatoes; bring to a boil.
  5. Reduce heat and simmer for 1.5 to 2 hours, until the beef is tender.
  6. In a bowl, mix together the flour, baking powder, and salt.
  7. Add the milk, melted butter, cheddar cheese, and parsley; stir until just combined.
  8. Drop spoonfuls of the dumpling mixture onto the simmering stew.
  9. Cover and cook for an additional 15-20 minutes, until the dumplings are cooked through.
  10. Serve hot and enjoy!

  • For a thicker stew, you can add a cornstarch slurry.
