  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Add ground beef to the pot, cooking until browned.
  3. Stir in chili powder, cumin, paprika, salt, and pepper, cooking for another minute.
  4. Add pumpkin puree, kidney beans, diced tomatoes, and beef broth. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
  6. Taste and adjust seasoning if necessary before serving.
