A hearty and flavorful beef stew made with tender chunks of beef, vegetables, and rich Guinness beer.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 bottle (14.9 oz) Guinness beer
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions, carrots, and celery; sauté until softened.
  4. Add garlic and tomato paste, cooking for an additional minute.
  5. Return the beef to the pot and pour in the Guinness beer.
  6. Add beef broth, bay leaves, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
  8. If desired, mix flour with a little water to create a slurry and stir into the stew to thicken.
  9. Remove bay leaves before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • This stew can be made a day in advance for better flavor.
  • Adjust seasoning according to taste.
